Risotto con la zucca

Nice and easy mid week meal

Risotto rice (don’t be deceived, you don’t need as much as you think. I always cook too much !)
Pancetta
Gorgonzola
Parmesan
Stock
Butternut Squash
Garlic
Herbs
Bag of rocket salad

 



I roast the butternut with garlic and herbs for 20 minutes
Then start the risotto
Put the pancetta in, add the rice and slowly add the stock. The pain with risotto is that you need to keep an eye on it and keep stirring.
When the rice is cooked add the Gorgonzola and serve on a plate of rocket with the butternut squash on the top. Obviously I add Parmesan too!!!
