Pasta & Ricotta

Another super easy mid-week dish
Only few ingredients that you probably have in the cupboard, just need to get some ricotta cheese from the shop.
I make the tomato sauce with passata and chopped tomatoes as I like the texture but if your kids are fussy you can just use passata.
Garlic and olive oil in a pan, add the tomatoes and basil and cook on a slow heat for 15/20 minutes. You want it to be nice and reduced. Then while the pasta is cooking add the ricotta cheese and mix it together.
Add the pasta to the pan and lots of Parmesan cheese or if you like strong cheese try pecorino.
Don’t forget to add salt to your boiling water before you put the pasta in!!
